Cook Mo' Fish

MahiMahi w/ Macadamia Nuts
1/4 cup chopped macadamia nuts
1/3 cup flour
1 lb. ziti pasta
2 lbs. MahiMahi, 4 fillets
3 tbsps. plus 1 stick (1/2 cup) butter
1 tbsp. olive oil
4 tbsps. lemon juice
2 tbsps. chopped parsley
Preheat oven to 350. Place macadamia nuts on pan & toast for 5-10 min. until golden brown.
Lightly flour fish on both sides. In a pan, melt 3 tbsp butter & 1 tbsp. olive oil. When pan is hot & butter is foamy, add fish to pan. Saute 3-4 min. until golden brown; turn fish & continue cooking 2-4 min. until golden brown & done. Remove fish from pan.
Add 8 tbsps. butter to pan, simmer until it turns golden brown, then add 4 tbsps. lemon juice. Stir twice, add nuts, stir 20 seconds & pour over fish. Garnish with chopped parsley.

Offseason Check List
We all are in the process of fixing tackle, making new rigs, checking the line on reels etc. Don't forget to check on the things you hope to never use , your safety equipment. Check the dates on your flares, is the fire extinguisher charged, what about the 1st Aid Kit. Does anything
need to be replaced from the prior year or any new medicines added. Make a list and purchase it on your next trip to Boaters World and get 10% off.
Trailer Prep
It's that time of year again and spring is around the corner. The best time to do your bearings and brakes is in the fall before the freeze. But if you put it off, take some time to do some trailer maintenance. It only makes sense as your trailer boat will spend more time on
a trailer than the water. I change my brake fluid every year as it attracts water and is also easy to do. Use a suction gun or turkey baster to suck it out of the master cylinder, then refill and bleed the brakes to remove the old in the lines. Refill master cylinder again. Check
the tire pressure and wear, rotate or replace worn out tires. Check you lights and connections - use dialectic grease on connections and the bulbs. Better to spend time now than along side the road where you do not have everything you need.
