Cook Mo' Fish

Rockfish with Yellow Pepper Picante Sauce
3 - yellow bell peppers
½ cup - chicken broth
¼ cup - dry white wine
2½ tbsp - White flour
3 - shallots, chopped
1 - garlic clove minced
1¼ cups - heavy cream or
half & half to cut the fat
1 tbsp - lemon juice
6 - fillets of Rockfish
1½ cups - your favorite picante
sauce
Salt & Pepper
Fresh cilantro
Roast peppers over gas flame or on rack over electric burner until charred and blistered, turning frequently. Place in plastic bag, seal bag and place in freezer 10 minutes. Peel, seed and stem peppers. Combine peppers, chicken broth, wine, flour, shallots and garlic in blender
or food prosessor blend until smooth. Pour pepper mixture into saucepan: heat to simmer. Add cream and lemon juice: cook over medium heat, stirring constantly, about 8 minutes or until thickened. Season with salt and pepper. Salt and pepper fish. Brush with butter. Grill or broil
fish.
Spoon sauce onto 6 plates. Top with fish. Place six spoonfuls of picante sauce equally spaced around fish. Using tip of knife, pull through picante sauce to make design. Garnish with cilantro.

Mackerel Trip in 2008
We will have a haywire twist machine at the meeting courtesy of Jerry Leuters along with all the supplies to tie rigs. So if you want to get a head start you can purchase the kits which consist of wire, hooks, skirts and swivels so you will be ready to go. We will show you how
you can hand tie these as well and you will be able to make them at the
meeting. Also bring your questions and we will answer all so you will know everything you will need for a week of fish catching fun.
Spring Tournament
We have already made reservations for rooms and slips. Mark your calendars for May 2-4. Sign ups will start early next year at the meeting.

Dec 15th MD Bay Rockfish season closes.
Coastal Fishing
Don't forget the coast is open year round and 2 fish per person over
28". Great fishing can be had out of Rudy Inlet and rooms at the Days
Inn on the beach are only $30 per night on the weekend if you mention
the Fishermen's Special.
Spring Rockfish Regulations
May 16 to Dec 15, 2007 2 fish per person @18-28" OR 1@ 18-28" and 1 over 28" Cannot possess striped bass between 12 midnight and 5am.
