Cook Mo' Fish

Rockfish
in Tomato Fennel Sauce
1 ½ cup chopped fennel
½ cup chopped onion
1 tsp. minced garlic
1 tbsp. olive oil
½ cup Pernod (anise liquor)
3 cups canned tomato pieces
1 ¾ cups tomato juice
½ cup dry white wine
¾ tsp salt
¾ tsp. Ground pepper
4 – 6 rockfish fillets
In
large skillet: sauté fennel, onion, & garlic
in olive oil until tender, about 5 min.
Add Pernod, mix well & cook 3 min. stirring frequently,
until most of liquid evaporates.
Add tomatoes, tomato juice, wine salt & pepper &
mix well. Simmer 15 min. stirring frequently.
Puree mixture in blender or food processor until smooth.
Return to pan and bring sauce to a simmer.
Add rockfish fillets. Spoon sauce over each fillet. Simmer,
covered, for 10 – 15 min. until the fillets flake
easily. Place fillets on platter or plate and spoon sauce
over them.

Welcome new members to the Frederick Chapter.
Many of us joined
the MSSA at a boat show during the winter months. With
that time approaching again, please check your membership
renewal. I am available during meetings for renewals and
new memberships. If you are interested in helping at the
MSSA display during any of the shows, contact any chapter
officer. The MSSA display is a great way to share with
others what the organization has meant to you.
Please welcome new members to the Frederick Chapter.
If you have a family membership, you can obtain membership
cards for your included family by listing their names
in the space provided on the application/renewal form.
Please note that the family membership only covers children
to the age of 16.
Please check beside your name on the member roster each
meeting. Check your renewal dates. Some MSSA tournaments
require the Captain to be a MSSA member. This attendance
information is useful for planning future meetings and
activities. Please update your demographic information
and email addresses.
We had approximately 50 present at the December meeting.

Report from Bill's Fishing

The water temperature
in the bay dropped to a cool 43 degrees on about the weekend
of December 13th and we went out for one more go at it.
The bite was extremely slow and we only landed one rockfish.
So I pulled the boat, winterized and tucked her away for
the winter.
I’m looking forward to another fun weekend at the
MSSA Convention at the Princess Royale in Ocean City on
the weekend of February 6-8. Many couples from the Frederick
Chapter plan to attend and it’s a fun and relaxing
time for all. The guys talk fishing and the girls go shopping
to catch all those off-season sales. The banquet is always
good eating and we do a lot of dancing. Hope to see you
all there.
