Cook Mo' Fish

Italian Seafood Soup
 
¾  cup butter
2   medium onion, chopped
3   garlic cloves, crushed
1   cup chopped parsley
2   large cans (1 lb 12 oz. each)
     whole Italian plum tomatoes
2   cans (14oz ea) chicken broth
1   bay leaf
1   tbsp. basil
½  tsp. each thyme & oregano
1   cup water
 cups dry white wine
lbs shrimp, peeled & deveined
1 lb  boneless cod or
       rock fish fillets
1 lb  back fin crab meat
lbs. scallops

Melt butter in large pot & add onions, garlic, & parsley. Cook, stirring until onions are soft. Add tomatoes & liquid, broth, spices, water & wine. Break tomato into chunks with wooden spoon while stirring. Cover & simmer for 30 minutes.

Add shrimp and fish fillets. Cover & simmer 10 minutes. Add scallops & crab meat. Cover & simmer 7 minutes.

Serve in large soup bowls with thick slices of crusty Italian bread. Soup tastes great with grated parmesean cheese on top.

After hearing reports about slow fishing on the Bay, Ralph Cope & I decided to give it a try early on the morning of Aug. 26. The weather & sunrise were beautiful. Drifting for flounder in the morning produced flounder up to 16 ½" & a few spot. We heard a report of stripers being live-lined off the power plant, I decided to make a run up to check things out. We picked up one small 14" striper on a large minnow. We saw breaking fish off Cove Point beach the evening before,so we went back south to check the action there. We saw small rockfish & blues working the shallows off Cove Point, we tryed the flounder one last time, producing fish up to 16 ½" on every drift. Some birds started working some deeper water off of Cove Point.Ralph & I started jigging with Gotcha plugs, which produced stripers to 20" & a bluefish. Even though the cooler wasn't full, we had a few meals of fresh fish & a lot of action on a beautiful day on the Bay.

There are reports of small trout being taken on the eastern edge. I have heard that late evening chumming around the 500-yard perimeter at the gas dock has produced rockfish up to 22". I heard of nice white perch being caught on artificial jigs in the grass beds in the creeks off the Patuxent River. It's a pleasure to see birds working over breaking fish with Spanish mackerel doing their arching leap. I have trolled Gotcha plugs effectively in the past for Spanish mackerel. If you're a fly or light spin cast fisherman, now might be a good time to take advantage of these breaking schools of fish. For the latest report, call the Fishin' Shack at 410-326-1891.
