Cook Mo' Fish

Flounder Seviche
2 lbs. Fresh flounder
2 cups fresh lime juice
2 large ripe tomatoes seeded
& diced
½ cup thin sliced scallions
8 ozs. Diced green chiles
½ tsp. Ground oregano
Salt and Pepper
Cilantro chopped
Cut fish into ½ inch cubes and arrange in a single layer in a glass dish. It must
be glass only. Add remaining ingredients, except cilantro. Stir well. Cover and chill for 6 hours, or until fish turns completely
white. Serve in the marinade garnished with cilantro.
Barbecued Shrimp
½ lb. Butter
2 dozen large shrimp, shells on
2 tbsps. ground black pepper
½ cup Worcestershire sauce
2/3 cup ketchup
Melt butter in a saucepan over a medium heat. Add shrimp & cook 5 minutes. Then add the
remaining ingredients & cook for 7 more minutes. Grab a roll of paper towels and dig in! |

Report from Bill's Fishing

On Saturday, July 19, saw favorable weather for a beautiful night fishing trip, which produced
nice catches of spot and croakers. The fishermen attending retired about 2:30 a.m. for a few hours shut eye, then had a nice breakfast
at the Frying Pan restaurant, after which we cleaned fish. Everybody seemed to enjoy the outing. Fishing has been slow, with fair
catches of pan fish, spot & croaker in the mouth of the river and several locations in the Bay. I hear that chumming at 72 for
rockfish is slow, but still producing keeper stripers. There are a few nice flounder being caught on the eastern edge between 74
& 76 and at the 3-legged buoy at the mouth of the river. On Monday, July 28, I lucked into a school of breaking rockfish, blues
& even caught a small 15-16". The trout have still not shown; I'm beginning to believe that there will be a no-show for
this year because of the water quality. The Cove Point gas docks are pretty much off limits for fishing with a 500-yard security
limit around the dock at all times now. The first ship docked on Friday, July 25, with Coast Guard,Natural Resources police and
other security keeping all boat traffic a fair distance away. It's not too early to start thinking about the 14th Annual MSSA Convention
on February 6-8, 2004. This past year the four couples from the Frederick chapter had a great time talking fish while some of the
