Cook Mo' Fish
by Maureen (Mo) Appleby

Rockfish with Fennel

2   large fennel bulbs
½  cup olive oil
2   rockfish fillets

Cut off & discard tops of the fennel down to the bulbs. Cut bulbs into thin lengthwise slices less than ½ inch thick. Use frying pan large enough to handle fennel & fish. Put in olive oil, sliced fennel, and ½ cup of water. Cover & turn heat to medium. Cook 30 min.until the fennel is tender, turning several times. If it is still tough, add ¼ cup water & cook a little longer. When fennel is tender, uncover pan & salt. Turn up heat. Boil away any remaining liquid in pan & cook turning the fennel frequently until browned. Season with pepper. Push fennel to sides of pan. Salt & pepper fish & place in the pan. Baste with some of the oil. Cover & cook for 8 minutes. Then gently turn the fish over on the other side, baste, cover & cook another 6 minutes. Place fish on platter, cover with fennel & oil from the pan.

Adapted from Seabass with Fresh Finocchio from More Classic Italian Cooking By Marcella Hazan 1979. This is my favorite and the best Italian cookbook in the world. Reading her cookbook is like learning to cook from my grandma Carlino.

Report from Bill's Fishing
Shack
By Bill Johnson

Wow!! is about the best I can say about this spring's trophy striper season. If you haven't been out to do any of this fine catching, then you've missed history in the making. The weather has been cold, breezy and rainy, but for the most part, fish-able and well worth tackling the elements.

On the first day of the MSSA tournament, it took longer to get to my favorite fishing grounds than it did to set three rods and put four nice stripers in the box. On the second and third days, I started catching a few of the hard-to-get slot fish-stripers between 18" and 28".

On Tues., May 20, I had a chance to take Don Erb and a friend of mine out. Before I could get my first rod out to its usual 300' mark, I hooked up with a 35" striper and handed it to Don. And that's a true fish story, not a fish tale. We had five fish, the largest was 40", and were back to the cottage in time for lunch. And if you don't believe me, talk to Don.

On Sat., May 24, I fished with Bruno Vasta on the Dottie V, and the bite had slowed considerably. I can't help but think of what the November fishery will be. There are a few small blue fish showing up, and there are a few hardhead being taken in and about the Patuxent River. I have also caught some nice hardhead up to 19" in the surf at Cove Point, though recently they have been much smaller. If the bottom fishing this summer turns out to be half as good as the trophy season has been this spring, then we're in for a tremendous year of fishing. Hope to have some pictures of success from the Fishin' Shack at the June meeting
