Cook Mo' Fish

Herb Crusted Rockfish with Star Anise Cream Sauce

8 tbsps. olive oil
2 cups chopped onion
1 cup dry white wine
2 cups fish stock
4 star anise
1 cup whipping cream

1 cup chopped shallots
4 tbsps. Sesame seeds
2 tbsps.Poppy seeds
2 tbsps. Honey
6 tbsps chopped chives
4 medium Rockfish fillets, 1½    thick

Heat 2 tbsps. oil in saucepan over medium heat. Add onion & sauté 5 min. Add wine & boil until reduced by half, about 3 min. Add stock & star anise: boil until mixture is reduced to 1½ cups, about 15 min. Add cream; boil until reduced to 1¾ cups, about 10 min. Remove star anise. Season with salt and pepper.
Set aside.

Heat 4 tbsps.oil in skillet over low heat. Add shallots & saute until tender but not brown, about 5 min. Remove from heat. Mix in sesame seeds, poppy seeds & honey. Season to taste with salt & pepper. Cool slightly. Mix in chives. Set aside.

Preheat broiler. Sprinkle fish with salt & pepper. Heat 2 tbsps.oil in skillet over medium-high heat. Add fish & cook until opaque in center, about 4 min. per side OR cook on outdoor grill, 4 min. per side. Transfer fish to baking sheet. Spread sesame mixture over tops of fillets. Broil until sesame mixture is golden brown, about 2 min. Transfer to plate & spoon sauce around fish.

Please welcome new members Mark Blye, Dave Wargo, Bach Vu, James Stephens, Charles Appleby, Jr, Chris Bruchie, Timothy Young, Donald Young, Michael Norwood & Mike Double to the Frederick Chapter.

If you have a family membership, you can obtain membership cards for your included family by listing their names in the space provided on the application/renewal form. Please note that the family membership only covers children to the age of 16.

Please check beside your name on the member roster each meeting. Check your renewal dates. Some MSSA tournaments require the Captain to be a MSSA member. The Tunament requires all participants to be MSSA members. We had approximately 110 members present at the March and 90 at the April meeting. This attendance information is useful for planning future meetings and activities. Please update your demographic information and email addresses.

This data will help us keep our allocation and provide accurate data on our catch. Otherwise we Will be subject to what the scientist indicate. Please take the time to fill this out as I'm sure many of you fished on opening day. We will also try to have the hard copy survey at the meeting.
