Cook Mo' Fish

Rockfish with Yellow Pepper Picante Sauce
3    yellow bell peppers
½   
cup chicken broth
¼   
cup dry white wine
tbsp White flour
3    
shallots, chopped
1    
garlic clove minced
1¼ 
cups heavy cream
       or half & half to cut the fat

tbsp lemon juice
6  
fillets of Rockfish
1½ 
cups of your favorite        picante sauce.
Salt & Pepper
Fresh cilantro


Roast peppers over gas flame or on rack over electric burner until charred and blistered, turning frequently. Place in plastic bag, seal bag and place in freezer 10 minutes. Peel, seed and stem peppers. Combine peppers, chicken broth, wine, flour, shallots and garlic in blender or food prosessor blend until smooth. Pour pepper mixture into saucepan: heat to simmer. Add cream and lemon juice: cook over medium heat, stirring constantly, about 8 minutes or until thickened. Season with salt and pepper. Salt and pepper fish. Brush with butter. Grill or broil fish.

Spoon sauce onto 6 plates. Top with fish. Place six spoonfuls of picante sauce equally spaced around fish. Using tip of knife, pull through picante sauce to make design. Garnish with cilantro.

This data will help us keep our allocation and provide accurate data on our catch. Otherwise we Will be subject to what the scientist indicate. Please take the time to fill this out as I'm sure many of you fished on opening day. We will also try to have the hard copy survey at the meeting.

Rockfish are beginning to stage off Virginia Beach. As the Bay water reaches the mid 50's, they'll be headed to the Bay to spawn. Hopefully by the 19th the big ones will be in the mid Bay.

Legislative Issues
Freedom to Fish Act - Senate Bill 535 was presented by the MSSA on March 7th. Chapter members Bill Johnson, Walter Shaw, Gordon Jernigan and Bill Snyder attended the hearing to show their support. Thanks guys. House Bill 1160 does not have a hearing date yet but we encourage you to contact your legislators and have them support this. We have 386,430 licensed fisherman in the state of Maryland and less than 5% belong to some type of fishing organization. Don't think someone else will do it, make time and make a personal call to you representative.
